Happy Halloween everyone and a very special Happy Birthday to my Mother!!!  Best lady around 😀

Another month and another box of goodies.  Seriously people if you haven’t joined Lindsey at The Lean Green Bean yet then we can’t be friends (just kidding, let’s still be friends please!)

I actually got the box the day I left for the Bourbon Chase so didn’t really get to inspect the contents until that Sunday.  Here’s what Olivia sent me:


I promptly broke out the Almond cookies as a recovery (ok just yummy) food as I laid in bed watching Parks and Rec on Netflx.  I also made granola using the coconut peanut butter and it’s now one of my favorites 🙂 Mmmmm.

Ok but serious descriptions now…..

1. Earth Balance Coconut Peanut Butter.  This definitely had a different flavor to it but it grew on me and like I mentoned earlier was super delish on the granola I made (though in full disclosure I did burn a bit 😦 ).

2. Anna’s Almond Thin Cookies.  I regret to inform you that I couldn’t control myself with these and they only lasted a day haha.  I would take out 2-3 to enjoy then find myself taking out 2-3 more an hour later until there were no more 2-3 to take out.  These were by FAR my favorite item, Thanks Olivia!!

3. Dagoba Raspberry Chocolate Bar.  It’s a bit of an understatement to say I love chocolate.  I have finally come up against a chocolate flavor that I didn’t like that much (GASP!)  I know right!  It was good but not good enough to wanna consume the whole thing in one sitting.  So really maybe that was a good thing lol

4. Crystalized Ginger.  Not for the faint of flavor buds, it definitely has a strong taste and again not one that you would want to binge on.  But like Olivia said it did have settling effects on the stomach so I enjoyed it.

5. Tamari Almonds.  Oh Lord did these become my newest snacking obsession.  They were great to take to work and eat between training clients!  Double Yum thumbs up!


6. “Evening in Missoula” Tea. Lastly was this delicious tea named for the very town Olivia hails from.  Yum yum.  I’m not much of a tea drinker so this gets major props to have me think it was worth drinking.

Race Recap….Sort of

I’m alive and survived back to back 200mile relays I swear!!

I got back into town just in time to go to work so not much writing is being down as you can see.  These next three weeks are going to be a big crunch at school and work so I apologize in advance if my posts get a bit sparse.  I will have up my Ragnar recap in the next couple of days as well as my Foodie PenPal post so lots of fun stuff for y’all to read!

Bourbon Chase Pt 1

Well I not only survived but conquered the Bourbon Chase this past weekend!  For those who don’t know what the Chase is, it’s one of the many 12 team relays popping up everywhere.  I’ll be running Ragnar TN this weekend which is the same set-up, 200 miles, 12 runners, and 2 days of pure running.  If you’ve never done one it needs to immediately go to the top of your racing wish list.  Hands down the funnest races I’ve ever had the pleasure of running. 🙂

Back to my recap.  I joined pretty last minute a team named “Run Faster I Hear Banjos”…Um yea, they were amazing and the perfect team for me!  I made 13 new friends (11 runners and 2 drivers) and couldn’t have had a more fun weekend 😀

We did get hit pretty hard with some rain Saturday, and needless to say it was freezin (for the South) both days.  I somehow lucked out and on my last run the Sun came out.  I like to think it was a omen for the end of a wonderful weekend.  We finished downtown Lexington where we were awarded our medals and joined in the post-race festivities!

We stopped at every distillery along the Bourbon Trail (maybe 12 of them?) but I only really remember 4-5.  Since it was raining I didn’t do too much exploring the second day unless I was out running so missed out on some stuff.  Every stop had bourbon shots, or for those of us less inclined water and hot chocolate, as well as chocolate bourbon balls.  Best believe I had several of those each time lol.


Speaking of hot chocolate, I think I had 4 or 5 or 6 (….I lost count) throughout the 2 days.  And I don’t mean a measly styrofoam cup of chocolate…I mean a large steaming bucket of it.  Every single one of my runs was fueled mainly by homemade coconut butterscotch granola and hot chocolate.  Not the best idea ever but totally delicious and worth every sip!!

The Bourbon Chase was by far, hands down, no questions asked one of the BEST races I’ve participated in and I will definetely be looking forward to it next year.  I’ll try and take more finish line photos for Ragnar, I kinda forgot this time around oh well.  Later this week I’ll share all pictures of scenery I took during the race so you can get the full effect of how beautiful KY is.

Bourbon Chase Pt 2

As promised I have compiled a photo montage of all the beautiful scenes from the Bourbon Chase this past weekend.  Seriously Kentucky is gorgeous and you should feel jealous after viewing these.  If you haven’t already read it, you can check out my race recap here.

Day 1:

We started out at Maker’s Mark which to be honest was the only alcohol name I recognized.  One of my teammates new a guy so we got a private tour of the place which was super cool!


They also had bourbon balls, which I may or may not have had like 3 or 4 haha

I was in van 2 and we started running around 5pm so had some nice sunset runs then the rest (including me) had night runs.

My first run was at night so I got to wear this super fashionable race vest and headlamp 🙂  The headlamp is one i’ve had for awhile and it pivots to point at the ground and besides a little bit of slipping down every now and then (I’m convinced I have a weird shaped head) you hardly notice it.


Day 2:

The beginning of my second run started at night but then I was lucky enough to get the sunrise with a few miles left to go.  I ended at Four Roses distillery right along the river.

Then the rain started……


And it kept going until almost 3pm or so.  I didn’t run until 5:30 so got lucky on that one.  Somewhere along the way when my van stopped for food, I lucked out and caught the tail end of the TN football game, which the WON!!  WHOO GO VOLS!  Lucky weekend indeed 🙂

I Hear the Banjos

Only one more day before the Bourbon Chase!!  I’m starting to freak out slightly……

Now I know it’s going to be amazingly fun(yes that is a word). I mean the race has a Hippie theme this year.  And I’ve been assured by my team that don’t care about finishing-times just the fun along the way.  But my knee tends to act up on longer runs and I’m running the equivalent of a half marathon over two days.  Might sound easy to most of you, but then you’ve probably not had 2 knee surgeries…..Or if you have, I’m just a wimp lol…Plus the weather looks like this…..


Yea….there was NO sun all day…none…..

Anyway, my team name is something along the lines of “I hear the Banjos, run faster”  or something like that.  Apparently it’s from a movie I’ve never seen.  But I know our vans have giant banjos on the top and will be blasting bluegrass the whole 200miles so I couldn’t have found a better team!

Oh, I traded in my Brooks Adrenaline shoes yesterday for a normal width (I originally bought a narrow) and took em for 2 miles this morning and my feet felt good.  I’ll keep them in reserve for a longer distance to see if they still feel alright, but I’m hopeful.  They really are some sick shoes.

And here’s a little sneak peek at my Ragnar costume next weekend….there may or may not be a cape attached to the back 🙂

My Weekend in Photos

I’ve been so busy trying to get ahead in class and work I haven’t had much time to write.  Though over the next two weekends I’ll have lots of fun race stuff for y’all.  Anyway, since I know you’re dying to know what I did this weekend (read that with a heavy dose of sarcasm)  I’ve included lots of pictures for your viewing pleasure…..

First up I got this little lovely bear in the mail today from my friend up North.  Now I can rep both my teams in style!!


Next up I spent Friday night babysitting for a friend and being ignored by their dog……I did get to watch Zoolander while eating free pizza so it turned out alright 🙂


Kicked off the Halloween month with a  Zombie play….it was a comedy, I don’t mess with that scary stuff lol


Attempted to mail my FoodiePenPal box, and severely misjudged the Post Office’s hours so that’ll haveta happen tommorrow…..Ooops


Spent way too long trying to do my laundry (the dryer decided not to dry my clothes…thanks dryer…)


But it was totally ok, b/c this little guy was outside the window to distract me from my rage 🙂


And finally I got some new runners, Brooks Adrenaline!  Super cool and didn’t make my knee hurt at all, but the balls of my feet were on fire after 2ish miles, so sadly I’ll be returning these beauties tomorrow as well 😦


So the hunt for new running shoes is still on, my old ones will have to suffice for this weekend (BOURBON CHASE BABY!!).  So that’s one Marvelous weekend for me, disappointing purchase and crappy timing aside.

Whew, I know it’s taken me a hot minute, but I was so generously nominated by two lovely ladies for the Leibster award.  I know right, so grateful to both of them for thinking of me.  Seriously go check out both of them b/c they are two of my very favorite bloggers.  Because I was nominated twice, I decided to merge both of them together so bear with me as this will be a longer then usual post and you will know more about me at the end of this then you probably ever wanted to lol.
My first nomination came from the wonderful Sami @ GoGoMountianGirl and her questions are answered below:
1. If there was a movie made based on your life, who woud play you and why?  Hmmm tough choice, I’d like to say Blake Lively b/c she’s seriously so gorgeous but I think that’s more me wanting to be her lol.  So it would probably be more like Anna Paquin, both gorgeous and able to kick butt.  (wishful thinking maybe? oh well)
2. What was the last thing you Googled?  This is such a dangerous question haha.  I use Google way more then I probably should, especially in grad school I ought to know half the things I look up lol.  So the last thing I Googled  was “wellness wheel” for a presentation/class I’m giving to faculty pretty soon.
3. What is one of your guilty pleasures?  I have a lot of these, life’s not worth living if you can’t enjoy yourself right?  At this very moment I’d say Peanut Butter and Co flavored peanut butters.  I have to keep myself from buying them all the time b/c I’ll eat it straight out of the jar! haha
4. What is something you know now that you wish you knew “then?”  I wish I knew then not to sell myself short for a boy.  Have confidence in myself to leave behind a bad situation and go out on my own.  Is that cliche?  We all have that one “ex” I’m sure, and if you don’t, then you go girl!
5. What do you consider to be one of your greatest accomplishments?  I’d say grad school?  Or maybe working and living on my own before grad school in Boston?….basically I’m still working on great accomplishments lol
6. What is one thing not many people know about you?  I actually love to sing.  I’ll never win any awards for it or anything but I have a secret love of the choir.  My favorite part is when we all harmonize together, and I love any song that you can hear all the different parts.
7. If you could wave a magic wand and change one thing about your life, would you? What would it be?  I wave my ward and have all my friends and family living in one city.  I’ve moved all over so have friends all over which makes it difficult to see them as much as I’d like 😦
8. What is your favorite Disney movie?  The little mermaid, something about a girl wanting to experience so much of the World that she was denied growing up.  I love to travel and explore so the adventurer in her speaks to me.  Plus I have a irrational fear of the water so I thought being a mermaid was so brave haha.
9. What is something you’ve never done, but woud like to try?  I’ve got quite the extensive Bucket List but the one thing that sticks out for me is travel to a foreign country.
10. Where is your favorite pace to be?  With my family, and in that I include my very best friends.  Friends are the family your choose after all.  In second is out in nature, the park, the mountains, just outside!
11. What is your favorite blog post you’ve written?  That would have to be….All of them!  Doesn’t really answer the question but I do like everything I’ve written or else I wouldn’t have written it.  Ok fine favorite post: Running if Freedom or Tricking my Brain or Are you a Runner? See what I mean lol

  1. Does your family know about your blog?  Yes, mostly my Parents are the only ones that read it though (Hi Mom!)
  2. Books or movies?  Books, I’m such a nerd and my library card is one of my most prized possessions lol.
  3. What do you see yourself doing in five years time?  Hopefully working in worksite wellness at a University maybe? or weight loss programs in a health setting somewhere…very specific right 🙂
  4. City or the countryside?  This is tough but probably the country.  I’m not a fan of traffic or pollution and love wide open spaces and getting lost in nature.  Though I do love the adventure and bustle of the city (speaking of Boston).
  5. What’s your favorite color?  PURPLE!  I have purple everything haha.
  6. What’s the beauty product you can’t live without?  Mascara, without it my eye lashes wouldn’t show up!
  7. If you could only eat one food for the rest of your life, what would it be?  Calories aside it’d be pizza….so versatile and yummy.  I never get tired of pizza Mmmmm.
  8. What’s the first blog you read?  I think it was a food blog of some sort, I went through a baking craze in college lol
  9. Do you prefer to workout alone or with a workout buddy?  Alone.  As a PT I love working other people out or leading group classes but when it comes to my own sweat sesh it’s “Me” time.  I get
  10. What’s your favorite social network?  Facebook?  Though I’m starting to fade away from there and have recently discovered the joys of Vine haha
  11. Are you an early bird or a night owl?  Early Bird!

Marvelously Freezin on a Monday

I woke up this morning able to see my breathe….Um I live in the South yo, not cool Mother Nature!  Ok so Kentucky is technically as far north as you can get before leaving the South but still, give me a break October.  Rant over, As you can tell I am NOT a fan of cold weather, even slightly cold weather sends shivers down me spine!

Whew, Monday already huh?  Where is my time going?  I guess spending all weekend writing a research paper can do that to a person…..Oh grad school how you tickle my funny bone 🙂 lol  I started my day extra early this morning to run Before my day started (I know right, GASP!).  I had an ulterior motive though, I wanted to go by Great Harvest and pick up some of their pumpkin bread before it all sold out.  Those suckers go fast if you’re not quick!  People with real jobs get there and take them at around the same time I’m rolling my college booty out of bed….which is way earlier then most students so what gives right?


Anyway, I got some today and enjoyed it along with a mug of pumpkin hot chocolate this morning post run.  If that’s not how to ensure you’ll have a good day then idk what would.

Next it was on to campus to print off the philosophy paper I’ve been working on for 2 weeks only to be told it’s supposed to be double spaced not single…..which I had done…Yea…so an hour later I’d pared it down to the essentials an printed it.  Marvelous in this case was the pride I had for being able to write 13 pages on a 6 page limit (brian power yo!) lol

Then it was class and finally home to snuggle in my jammies and eat a deliciously warm bowel of soup.  Oh and one of these too…..Life is good 🙂

Homemade Granola

I was in charge of the Health and Wellness table at the Retirement Conference on campus yesterday morning.  I learned more about medicare and retirement pension then I even knew existed haha.  But I also got to meet tons of faculty form all over campus and they are always a pleasure to talk to 🙂


Today however, I did something very exciting that will forevermore change the way I approach food….I made my own granola!  I eat granola like it’s a religion.  I don’t discriminate against any flavor, eat it on yogurt, as cereal, or a snack.  I don’t however like the price-tag that goes with it.  In my constant quest to become more of an adult (and adorable wife-y material) I decided to make my own.

I used a basic recipe I saw on SHAPE.com then added my own flavors and add-ins.  Granola is so () it’s awesome!  So I did put the basic recipe below but just know that I added pecans, pumpkin spice, cinnamon, vanilla, and used coconut oil instead of canola.  Other then changing everything it’s the same recipe haha


Here’s the basic recipe in case you wanna give it a shot yourself…So super simple….

     -1 cup old fashioned oats               -2 Tbsp honey               -1 Tbsp coconut oil

Then I added:

     -1/2 tsp cinnamon               -1/4 tsp cloves               -1/4 tsp nutmeg               -2 tsp chia seeds               -handful pecan pieces

I also kicked off the month of October pretty good so far.  I’ve gotten in 15/70 miles in the first few days, and with 2 overnight relay races in a few weeks, I’m actually hoping I’ll be closer to 80 or 90 miles this month.  I’m  a dreamer what can I say 🙂

Road vs. Trail Running

There’s no denying October is upon us!  The leaves are falling and the temperature (is supposedly) dropping.  It really is the perfect running weather.  Crunchy leaves below, breezy skies above…love.


So I’ve got this thing about running in neighborhoods…..basically it freaks me out.  For some reason I always feel like everyone is just sitting at their windows watching me run by. (and of course silently judging me lol)  Like they have nothing better to do right?  Most likely nobody is even home!  And it’s not just limited to neighborhoods.  Really any public sidewalk where there’s lots of traffic or businesses.  Is that weird?

So I stick to the trails and places no one can creep on me. lol  I would literally rather drive 30min to a park then just walk right outside my door….It’s a problem…

Now I want to try to convey to you just how seriously people around here take their basketball…..


Welcome to Wildcat country!  Big Blue Madness is next week and these people are camping out for tickets….which aren’t even sold until Friday (this picture was taken Wed morning at 5:30am…..yea).  If you don’t watch college basketball this probably looks even crazier to you, but 8 national championships later and this is standard fare.

Oh also, it’s really hard to try to publish a post while trying to straighten your hair at 5am.  I may or may not have straightened my ear instead….just saying, be careful people….
