Two Years of Blonder Side

Happy Friday Friends!

Remember that one time I said it was my Two Year Blogiversary the other day? Well I finally decided to do something about it. It’s late, but heck, if I can’t be late to my own blog party than what can I do?

2 year blogiversary

I actually saw this fun way to reflect on Kate’s blog to celebrate Her anniversary (we started around the same time how cool!) and I loved it so much (note: my blog was beginning to wonder if I forgot) I decided to do one of my own 🙂

Here’s a collection of some of my favorite posts from this past year!

Favorite Recipes

>> We’ll start with a non-dessert one….it’s rare I know…. Mexican Inspired Quinoa Salad.

>> Chai Spiced Sugar Cookies Chai plus sugar cookies? A heavenly combination

>> No Churn Smores Ice Cream Because, duh, it’s ice cream and I make it and it’s better than any storebought stuff. Step aside Ben and Jerry, Kelsey is the new name in Ice Cream!

Favorite Humor Posts

>> Things That Are the Worst I know I just barely wrote this, but it seriously was one of my most favorite posts to write. Y’all seemed to really like it to so perhaps we need to collaborate on a Part 2.

>> The Survival Guide to No Cell Service In which I learned Kentucky isn’t part of the United States, according to Verizon anyway….

Things that are the worst (humor)

Favorite Learning Posts

>> Lessons I Learned at 24 I’m still learning lessons all the time. And maybe re-learning some as well. Isn’t life fun?

>> Letter To My Younger Self. Hindsight is 20/20 as they say. Good job so far little Kelsey!

Favorite Rando Posts (there were a lot of these)

>> How to be a Proper 20-Something. Turning 25 made me really introspective about life I guess. This post coulda been in the humor section but the last one is so true and so NOT funny I put it here instead.

>> The City Girls’ Survival Guide to Boston. Anytime I observe people my mind tends to write these kinds of posts. I just can’t help it. People are fascinating and I love this life!

Proper 20-something

Whew, that walk down memory lane was kind of exhausting. Blogging is fun except when it’s not, and curating your own posts is one of those times. I mean heck, obviously I liked all of my posts or else I wouldn’t have published them so choosing just a few was hard. But I did it and got to eat a donut int he process so it’s all good in da hood.

Did I miss Your favorite? Do you even have a favorite? Am I the only one who read today’s post? Is anyone out there?

I’ll just go eat some ice cream now…..

Pre-Wedding Day Fun

Whew what a whirlwind of a weekend that was, I barely made it back to school in time to hit the hay for work early this morning. And while I’m no expert on wedding’s, this one was a wedding for the ages. Only to be topped by my own of course, whenever that may be. Just call me alate bloomer lol.

After today all my finals and projects will be finished and I’ll be back on track in Blogland. I know I’ve been terrible at responding these past 2 weeks and I apologize for that. I have a bag of excuses to pull from so if you’d like one just let me know 😉

It wasn’t even my wedding and I’m so proud to post photos from it so I can only imagine what a picture posting crazy person I’ll be with my own wedding to celebrate.

I’ve gotten all bridal and groomal (?) (not that he cared) approval to post these. And really there just pictures of me with the groom (my brother) and the bride having some fun.

Here’s the day before when we set up the venue. I’ve got a ton to go through from the actual day so I’ll post those later so as not to overload you with all the gorgeous happenings. If you follow me on Twitter or Instagram (pssst you should) You’ve seen a real wedding photo, but today you get pre-wedding day first.

As you can see we have a very loving relationship. He’s only a year older then me and we were thick as thieves growing up. We worked all the same jobs and had lots of the same friends. Except the ones I dated in which case he no longer wanted to be their friend anymore (sorry boys…)

Bro’s before Hoe’s though……..He always wins in the end.

This beautiful lady is now my sister and I couldn’t be happier. She is so good for my brother and since she’s an only child, I get to be the big sister she never had. Since I’m already the best big sister there is (or so I’m told by the little one) I think she’s married into a pretty good family.

The three of us together can have quite the good time…..The very fact that I have a blog should tell y’all that I’m the spotlight stealer in the family. So much to say and I like my star to shine bright and hot. However, I’m no stranger to givin it up for a day or two…but Only two… 😉

Sometimes Cody decides to be cute…..but don’t worry it doesn’t last long and it’s back to jokes and sarcasm per family tradition. Fun fact: He likes to tease me about being a dumb blonde but now I can tease him for being a boring old married guy. So much love it’s sickening ;D

And b/c it’s my blog, we’re going to end with a picture of me, b/c when you’ve been gifted with a good picture day you take advantage of it dangit!

Call me conceited, just wait until I tell y’all about getting my make-up done professionally……

Fourth of July Recipe Round-up

Happy Wednesday Lovelies!

I’m having a bout of indecisiveness….My Momma taught me never to show up to a party empty-handed (a rule JB is always trying to get me to break). But alas, I can’t decide what to bring this weekend…

This is where Pinterest usually steps in and saves the day. All it’s done this time is suck me into it’s deep vortex of time-wasting and food porn photos…le sigh, my life is so hard… Here are a few of the things I’m debating between. You’ll notice a distinct pattern of super easy mostly non-time intensive easy as pie (but not a real pie) kind of options. Now I just need y’all to pick one for me to actually put together, please and thank you…Aaaaaand go!

>>This Red, white, and blue fruit salad (b/c fruit) from Winning Without Gluten

>>These Rice Krispie Treats (b/c duh) from Lil’ Luna

>>Patriotic Peanut Butter Cookie Dough Bark (b/c cookie dough) from Crazy for Crust

>>Red, white, and blue fruit skewers (b/c minimal work) from Gina’s Skinny Recipes

>>Firecracker Sugar Cookies (b/c cookies) from Momdot

>>American Flag Toast (b/c I’m givin up) from Taste and Tell

Time to cast your votes or share your own recipe! As you can see my criteria for wanting to make something is pretty minimal so really the sky is the limit…Just not the actual sky. Let’s shoot more for the tallest-building-in-a-rural-farming-town-in-the-midwest kind of height. Aka low, my abilities are probably even lower then that 😉

I hope everyone has some rockin plans to celebrate this weekend. Or at the very least has the day off. Also that you’re planning on joining me, Suzan, and (officially) Kristen for the Secret Blogger Club on Monday! Need a reminder? Send me your email and I’ll add you to the reminder list.

Oreo Pudding Cookies

I know the saying goes “April showers bring May flowers” but is there anything about March being a bratty you-know-what? I mean I’m not gonna complain about school/work being canceled but the giant ice storm that rolled in last night? We just can’t catch a break!

It’s a fact that being stuck inside alone all day can make a person go crazy (as if that hasn’t happened already). And other then talking aloud to myself, what better way to combat the craziness then with cookies! I made these the other day with one of my besties but y’all get to enjoy them for the first time today. I’d say we hit it out of the park with these, but you’ll haveta make them for yourself to see.

I got the original recipe here, but my local Kroger wasn’t cooperating so my ingredients were a tad bit different. They turned out divine however and they will for sure be gracing my tastebuds with their presence again. They’re super simple to put together and best right out of the oven of course, though they do store well too.

I added the M&M’s as a wishful thinking, ready for Spring type deal, but obviously Mother Nature wasn’t impressed…..sigh… Oh and that 10 mile run I was supposed to do today? Eating 10 cookies is definitely the same thing. They both take dedication and persistence, so I feel pretty good about it. Marathon cookie-eating training is the best!

Oreo Pudding Cookies

  • 1 cup butter softened
  • 1/2 cup brown sugar (I used turbino sugar)
  • 1/2 cup white sugar
  • 1 package  Hershey’s white chocolate pudding mix
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cups flour (I used 2 cups wheat and 1/4 white)
  • 1 tsp baking soda and salt each
  • 10 chopped (or smashed) Oreos
  • 1/2 cup Easter M&Ms to make them pretty

Preheat oven to 350 then mix ingredients in the order listed. Cream butter and sugars together, add pudding mix, etc stirring together as you go. Bake for 7-9 minutes or until done. Ours baked for almost 15min each but come to discover afterwards we had 2 pans , one inside the other lol. We’re smart I promise! Just a bit preoccupied with girl-talk to notice much else around us haha.

Alright I hope y’all aren’t stuck inside alone like I am today. But if you are either go make these cookies and send me some, or just talk to me so I don’t go crazy talking to myself. Both are very acceptable behaviors 🙂

Oh and a very Happy March to y’all! (where is the time going???)

A Valentine to Running

Who had a dream about running (and winning) a marathon last night? THIS GIRL! haha…I also consequently didn’t turn my Garmin on an there was a maze at once point, but still. Best. Dream. EVER  😀

So 5 mils conquered on the treadmill yesterday. This weekend I’m hittin double digits with 10!! (hopefully NOT on the hamster wheel) I also am one of the workers at the Heart, Glove, & Sole 5k here in Lexington. It’s put on by my office so I’ve been doing a lot of the leg work that goes into a race. It’s been weird/fun being on the other side of a race and I certainly have a newfound appreciation of race officials and organizers.

In keeping with my Valentine’s theme this week, I thought how appropriate it’d be to write a valentine to the one thing I love most in this world. Bloggingfoodsigned copies of my Lauren Conrad books…RUNNING! And b/c I’m such a giver, feel free to give this valentine to your own running shoes so they know just how you feel 🙂

Dear Running,

Roses are red and violets are blue,

I’ve got bad knees so I know the importance of a good shoe.

Also that outside is always better then the gym.

You fill me full of joy right to the brim!

Whether I win or lose,

Or bring up the caboose,

Race day is my personal nirvana.

You’re always there to see me through

All the happy times, as well as the sad and blue.

I love you Running despite this bad knee,

Also I have no friends so please don’t ever leave me….

Happy (almost) Valentine’s Day everyone. If you cold write a valentine to something you love what would it be?

8 Mile & Valentine Week

Wowza, I somehow snuck an 8 mile run in this weekend between all the bouts of snow and slush we got. It was one of those magical runs where you’re in the zone and the miles just slip by. And Oh. My. Goodness! It felt SO GOOD to be back outside again!!! That right there is my freedom kids 🙂 This is also my last week without a double digit run and I’m gettin kinda nervous/excited. When I ran my Half I didn’t really follow a training plan so honestly I never ran over maybe 8-9 miles (gasp, I know). So we shall see!!

Now for something fun…..I’ve got a few Valentine’s themed posts comin up this week.

Valentine’s Day is coming up and I know some of you out there are just as date-less as I am right now (though I am working so money is a nice consolation prize). Don’t let that worry you though, it’s only Monday so we’ve got 5 days till that clock strikes midnight and we turn back into a pumpkins. I recruited my sister for help on this one, so if we all put our heads together we may just pull this off.

Because I’m the wonderful helper and hopeless romantic that I am, I’ve put together a list of MARVELOUS ideas for how you can snag yourself a date for Vday. These are things that have personally worked for me so I apologize if they don’t have the intended effect for y’all. Just remember above all else, confidence is key! And if all “else” fails no man can resist a woman who cries….work-it girl!

My beautiful sister (who already has like 10 dates don’t hate)

-Casually drop hints to every guy you know that you’re still date-less. Your guys friends, classmates, co-workers, the mailman. There’s gotta be some poor sap out there that will be guilted into taking you out to dinner.

-Change your Facebook relationship status to “in a relationship with____” and send the request to every single guy you’re friends with. Chances are at least one will take the bait. 60% of the time, this works Every time so the odds are in your favor. And don’t worry, if anyone gets weirded out by this gesture just claim hacking.

-You know the phrase “ball and chain?” Get your own and attach it to the nearest single male, Viola! Instant date! (maybe not the most willing of dates, but ya know we gotta take what we can get at this point).

-Recruit your guy cousin to go to dinner with you then just conveniently forget the minor detail that he’s your cousin when you’re regaling your girlfriends with stories about your mystery man. Tall, dark, AND handsome, he’s got it all (mainly b/c you’re lying through your teeth but shh they don’t need to know that part).

If you use any of my tricks let me know!! And it they’re not really your style that’s ok too. I mean, really, who needs boys to have fun on a Friday night? Ladies Night is calling and it wants to have a good time 😉

Who else had a long run this weekend? Any more magical runs goin on out there?

Overwhelmed with Love

I am seriously overwhelmed by the outpouring of love and support I got from yesterday’s post. Not gonna lie I was super proud of it and was hoping y’all would enjoy it, but I never imagined what I got. If you haven’t read it yet I’ll wait for you….Reason’s to Date a Girl Who Runs ….Back? Ok.

Not to use the term viral loosely, b/c trust me Double Rainbow Man I am not, but for my little blog literally tripling it’s views in the first hour of posting….that is pretty darn viral to me 🙂 So I want to say thank you to anyone and everyone who liked, tweeted, or shared it with their friends and family. Now KEEP DOING IT! j/k ….But seriously, I feel truly blessed to have such wonderful bloggy friends supporting me 🙂

But don’t think it’ll go to my head, oh no. While I don’t consider myself a one-hit-wonder (I’m talking to you Big Bro), I do know that the level of exposure I got yesterday is not likely to remain the norm…..Remember when I talked about being realistic? Yea, I’m taking that to heart don’t worry. So thank y’all once again, especially those who will be stickin around for a bit longer.

I guess I should say something about running, since this is a running blog……was that enough? Whatever, I’ll leave you with a picture of a double rainbow, b/c maybe I do want to be an internet sensation 😉

Now back to your regularly scheduled program 🙂
